White Wine & Chilli Mussels

SERVES:       8

INGREDIENTS


1kg fresh mussels, washed


1 medium brown onion, finely diced


3 tomatoes, diced


2 shallots, finely sliced


1 handful of chillies, sliced


2 tbsp garlic paste / 7 cloves garlic, crushed


2 tbsp crushed ginger


150gr fresh chorizo, diced 


150gr diced bacon


3/4 cup dry white wine


2 tbsp olive oil


1/2 cup water


400gr linguine


1 handful of basil or parsley to garnish


METHOD


Cook pasta according to packet instructions, drain and toss olive oil through so the pasta does not stick together. Set aside.


Over low - medium heat, add olive oil into the pot, and stir in garlic, ginger, onion and shallots. Let the onion and shallots soften & brown, the caramelisation will bring out the sweetness.


Add in diced chorizo and bacon, cook for 3 - 5 minutes.


Add diced tomatoes and water, and stir through (30 seconds).


Stir in wine, turn the heat up to medium and then add the mussels into the pot.


Stir once or twice to ensure the sauce covers the mussels and then immediately cover the pot with the lid (check on the mussels, you will know when it's cooked when the shells open up - generally 5 - 7 mins, seafood is super easy to cook).


Once the mussels are done, toss the linguine through the sauce before serving; add basil or parsley to garnish & serve with your favourite dry white wine.
